Lazy Cooking

Am I lazy? Of course I am.

But in the kitchen, while cooking, my inner monologues sort of go away and I feel like I am in my element.

Not the case when I am baking.

Sigh.

Baking is difficult. Before marriage , I had baked only once or twice, having big time bakers for a mother and a sister made it easy for me not to. I never had any need to.

Now I do. Now that I have our own kitchen with our own supplies, I feel like I could bake all the time.

Except that I am scared to.

I first baked cup cakes last month for my sister’s baby shower. While they would have never passed the cute test, they came out perfect. Moist, not too sweet and very chocolaty. But my sister guided me through the process.

On 20th Jan, a Sunday , I made a simple lunch, pictures to follow, and tried my hand at baking muffins from a baker’s mix which I had picked up from Keels a couple of nights earlier. My thoughts were that I could start easy and simple and proceed from there.

Well, didn’t they turned out awesome!

The recipe only called for vegetable oil and eggs. I added chopped up cashews , raisins and some chopped up Cadbury chocolate.
